Sometimes you just have to have Mexican food. It is truly an overwhelming feeling that can only be accomplished by having it. However, certain Mexican dishes can be deep fried, oozing with cheese and loaded with fat. While every once and a while this isn’t an issue, sometimes we just want to eat it guilt-free. So here is a delicious and nutritious version of loaded nachos.
Ingredients:
1 lb of lean ground turkey
1 packet of Mexican seasonings
Water
Low-fat Mexican blend shredded cheese
Salsa
Plain Greek yogurt
Baked Tostitos chips
Tons of veggies
Instructions:
You first want to brown the turkey. Take a large sauce pan and put heat on medium-high. Place turkey in pan and break up into little pieces. Let the turkey brown and cook through. It should turn a light brown. Drain out the little bit of fatty juices at the bottom of the pan. Then put meat back on stove and add Mexican seasonings packet and water (amount stated on back of packet). Stir in water and seasonings and let mixture come to a boil. Once boiling, turn heat down to low and let simmer for 4 to 6 minutes.
Place baked Tostitos on a baking sheet lined with tin foil. Layer the low-fat shredded cheese all over the chips. Place turkey mixture on top of chips and add more cheese. Place in oven and hit broil. Watch the nachos until cheese is melted, then take it out. Your nachos are done, and now it is time to add the healthy stuff. You can add whatever vegetables you want, such as: lettuce, tomatoes, onion, jalapenos, etc. Add black beans for fiber. Replace high fat sour cream with plain Greek yogurt, and don’t be afraid of layering on tons of healthy salsa. If you want, you can skip the cheese all together and make it a really lean dinner.
